Amairo is an amazingly dense sake with a concentrated sweetness reminiscent of honey and a regal flourish of tartness. A bottle born of the singularly capable technique of Miyoshino Brewery in Yoshino, Nara Prefecture. Sake’s potential reimagined.

Blissful Dessert Sake

The flavors of Amairo are unlike any sake available, more dessert than spirit. Sweetness, tartness and umami hit the palate one after another for a voluminous and rich sake experience.

We propose an entirely new category of sake to be enjoyed after a meal: Dessert sake.

Rich like honey, it melts in your mouth like a fine chocolate. Mellow flavors come one after another, and a unique tartness highlights and enhances the extravagance of the moment.

Amairo embodies a new sake perfection. Experience joy in the moment – perfect to finish a meal, or as a luxuriant end to another day.

The Ruijo Method Produces Exquisite Mellowness

Making sake… with sake. The new potential of the ruijo method.

Sake is made with just three ingredients: rice, koji, and water. There are many ways to turn these ingredients into sake. One, the ruijo method, replaces some of the shikomisui water with fresh sake, for a final product that is dense, sweet and rich in umami.

Amairo additionally utilizes sake in the distillation process, on top of the ruijo method, to bolster and emphasize sweet, sour and umami flavors for a deep, transcendental flavor profile. The end result is a sake as rich and complex as an exquisitely crafted dessert.

Unadulterated Koji, Umami and Tartness Born from Nature

Miyoshino Sake Brewery, makers of Amairo, have long lived and worked in harmony with nature, going about their craft with sustainability as priority one. Since settlement, Yoshino City that the brewery calls home has taken advantage of the region’s humidity in the natural fermentation of goods. Amairo is no different, enjoying a balance of umami and tartness tied inextricably to the region that birthed it.

Miyoshino Sake Brewery utilizes only naturally occurring koji free of synthetic additions. Their sake products, Amairo included, exhibit a deep richness only nature can create.
