The Ruijo Method Produces Exquisite Mellowness
Making sake… with sake. The new potential of the ruijo method.
Sake is made with just three ingredients: rice, koji, and water. There are many ways to turn these ingredients into sake. One, the ruijo method, replaces some of the shikomisui water with fresh sake, for a final product that is dense, sweet and rich in umami.
Amairo additionally utilizes sake in the distillation process, on top of the ruijo method, to bolster and emphasize sweet, sour and umami flavors for a deep, transcendental flavor profile. The end result is a sake as rich and complex as an exquisitely crafted dessert.

Since settlement, Yoshino City that the brewery calls home has taken advantage of the region’s humidity in the natural fermentation of goods. A high volume of rainfall and a humid environment have instilled a fermentation culture, dating back centuries, in the people of Yoshino City, Nara Prefecture, where Miyoshino Sake Brewery is rooted.
Producing unique flavors that can only be born of Yoshino City’s fermentation culture, Miyoshino Brewery specializes in bringing out the rich flavor qualities of fermentation without the sour bite commonly associated with such products. Only this brewery is capable of creating sake with such a transcendental balance of tart and umami.
Yoshino Cedar, a local staple, is incorporated into Miyoshino’s brewing, connecting the company with the land and community that it calls home. Miyoshino works in harmony with its natural environment, working sustainably to deliver second-to-none sake.
Since 2017, Miyoshino Brewery has made sake using only naturally occurring koji and since 2018 the brewery has utilized 100% locally cultivated rice. Miyoshino foregoes modern sake trends, relying on its community and natural environment to dictate its principals in sake making - Miyoshino and Yoshino work as one for sake products that can be created here, and here alone.
